鍋貼(煎餃)

食材 ( 6 人份 )
豬絞肉400g
剝皮辣椒200g
水餃皮600g
蔥2根
薑1小塊
蛋1顆
香油1/2小匙
太白粉1大匙
【調味料】淬釀醬油露1小匙
【調味料】米酒1大匙
【調味料】糖1/4小匙
【調味料】白胡椒粉1/4小匙


作法
1 準備材料

2 絞肉加入【調味料】和蛋及薑泥攪拌均勻後以筷子順時針方向攪拌到看不到水份了(出筋),時間允許的話,絞肉冷藏一會會比較好包(不容易出水)

3 剝皮辣椒和蔥切碎,要開始包再把絞肉和剝皮辣椒拌在一起,加1/2小匙香油或麻油

4 水餃皮外圍的半圈先抹一點水,餡放在水餃皮中間,放長條型,將兩端黏合後再整個黏合留兩邊一點點開口就好

5 將捏合的部份倒向一邊(如果要翻面煎才不會煎不到整個)
如果包好吃不完,可整盤端進冷凍庫冷凍成型再裝盒或袋

6 以1大匙太白粉加1杯水(電鍋量杯)調勻

7 平底鍋放1大匙油以鍋鏟抹勻

8 將鍋貼整齊排列在鍋中央

9 倒入太白粉水(倒入前再攪勻)

10 蓋上鍋蓋轉小火煎煮到旁邊的太白粉水變成脆脆的冰花,而鍋貼也有些透明就完成了(也可以整片翻面再煎另一面)

12 將盤子扣在鍋中翻面就可以完整的換到盤中了
