好食"滷汁肉燥"

[b]食材[/b]
五花肉切絲或五花絞肉1斤
豬皮5兩
雞腳10隻
紅蔥頭10顆
青蔥5根
薑屑1匙
醬油1杯
酒1杯
冰糖2湯匙
五香粉1小匙
胡椒粉適量


[b]作法[/b]
1 五花肉絞肉或切絲1斤...紅蔥頭要切細..我沒用薑末.而是將薑切片..雞腳去指尖剁兩節..蔥給他捲成一束

2 調味料酒1杯..醬油一杯.冰糖兩湯匙.五小粉一小匙..胡椒粉適量....已上調味料可以自己是自己喜愛的口感增減

3 雞腳豬皮要先川燙過..備用

4 放點油..爆香紅蔥頭薑片

5 起香氣放入五花豬肉炒一炒..肉色轉白

6 再將所有的調味配料入鍋最後加入適量的水燉煮..約1小時甚至更久時間..當豬皮及及雞腳的膠質完全釋放..整鍋的滷汁都會黏口..很好吃的喔...香香的肉燥滷汁淋在熱騰騰白飯上.或是拌麵..都好好吃喔

7 可以善用這鍋滷汁..加入水煮蛋做滷蛋..豆包.豆皮.豆輪.麵筋.海帶.豆干.杏苞菇.貢丸...也會有好吃可口的滷味喔~~*
